Liquid Ice, Inc., San Marcos, Calif., is marketing a new ice cooling method for the produce industry. It is slurry ice.

The small particle size of this form of ice results in greater heat transfer area by weight than other types of ice.

Slurry ice provides faster cooling than other ice or ice/water mixtures, according to the company. Plus, the temperature of slurry ice is less super-cooled than flake ice, which is more prone to form hard crusts and lumps after storage.

A Liquid Ice system pumps slurry ice directly from the ice separator or from a storage/mixing tank. This means no refrigerated rake rooms of conveying systems are required. The system can be designed to accommodate cooling needs in modular capacities from three to 400 tons of ice per day.

The soft, flexible ice slurry covers without bruising and prevents air spots, common with flake or shell ice. The meltwater from ice slurry washes away bacterial slime and spoilage products, giving produce a fresh appearance and smell. Optional ozone gas injection systems for reduced bacterial counts also are available.

The Liquid System hydro cools and top-ices produce 40 percent faster and more uniform than conventional systems. It also produces more ice per kilowatt than conventional systems.
